Menu Plan Monday - 9/30/13
This week's menu has a couple of repeats from last week. Friday night, I fell asleep when I got home & the baked spaghetti never got made. (opps!) Taco meat night was a disaster. We've been using the Mrs. Dash Fiesta-Lime seasoning for our taco seasoning for a couple of years. I can't tell the difference & you save so much sodium! Unfortunately, it's been increasingly harder to find - so I picked up McCormick's Citrus-Lime seasoning. I prepped everything the night before & it smelled so good. However, the taste the next day was HORRIBLE.

Meal Planning 101
If you are here looking for the perfect method for meal-planning, you may want to search again. I'm not an expert meal-planner, but I thought I would share some tips & tricks that have worked for me. I've tried meal-planning off and on for the past few years. Despite the "planning", it seems like we always end up in a rut of eating the same meals. Since school started in late August, I've tried a different approach.
1. Sit down a make a list of recipes your family likes or of recipes you would like to try. My list generated 32 recipes as well as a few "new" recipes. Granted there are some variations on the list (tacos, enchiladas & spaghetti, lasagna, stuffed shells) - but there aren't any duplicates.
2. Dedicate time on your calendar to make your weekly menu. Thursday tends to be a good time - you can look at the grocery store sale flyers and generate your menu around meat or other items that may be on-sale.
3. Make a grocery list and check it twice. I live in the Southeast & two local grocery stores (Lowes Food & Harris Teeter) offer shopping online. You submit your order online, they shop the order, and you arrive at your pre-selected time to pick it up and go. They always call after they've shopped your order to see if you need to add any items. The cost is $4.95 per order. Some people think this is absolutely ridiculous. However, I've found that I stick to my list and actually spend less because there are no impulse buys. (and you can still use coupons!)
4. Keep a frozen pizza or other quick go-to meals in the cabinet just in case. There will be nights where the mountain of homework is unending or you simply don't feel good & it's quicker and easier to do a frozen meal. It's still cheaper than hitting a drive-thru.
5. Prep meals. I enjoy Sunday football but not all afternoon long. While super-husband enjoys the game, I spend a couple of hours meal-prepping. On average, I usually have 3 of 5 meals prepped for the week. When I get home, it's nice to preheat the oven and bake!
6. Why do I only plan meals for Mon - Fri? We have one "eat-out" meal per week and it tends to be Saturday or Sunday. Some weeks we have leftovers and don't always go through the 5 planned meals so I prepare one of those on Saturday or Sunday if needed.
7. How much do I spend? My goal is to keep our grocery budget under $100 per week; however, on average I would say I have been spending $125 per week. Understanding couponing is next on my list -- I've never done well at it or perfected the methods.
It's required a little more effort on my end - but the trade-off is well worth it. I feel more prepared at the beginning of the week (no thinking what's for dinner), we're saving money & we are eating out less. Do you have any meal planning tips?

Menu Plan Monday
For the past two weeks, I've gone over budget on groceries. My goal budget is $100 each week - I was over between $30-$40 each week. I'm trying not to get too discouraged about it. The good news - those groceries feed us breakfast, lunch, and dinner (plus snacks) all week. We ate out once last week and once the week before. Honestly, we are doing better than usual. Enough about that - here's the menu...

I opted for the easy way out and avoided the grocery store this week. I placed an order online via Lowes Foods To Go & picked it up the next morning. It sounds ridiculously lazy! Typically, I spend less because I stick to my list and there are no impulsive purchases. They will even take coupons and apply them toward your next order.

Getting Organized...
A New Year, a new resolve to try harder to stay on top of things and keep the 10 balls juggling in the air. :) Last year wasn't perfect - but I feel like I was able to stay on top of things better than previous years. Super-husband and I had the discussion the other day - it seems like the busier I am - the more on top of things I am - how crazy is that?! I certainly don't want to invite more "busy-ness" into my life, so for now I'll try to take advantage of some resources that have helped me. (Note: I'm not paid or compensated in anyway to say what I am about these services/products - but I thought I would share them with you) :)
Erin Condren planner: First off, I will say that I do think these are on the expensive side. For months, I read all the hype in blog land about how great they were; how beautiful they were; and then around March of last year I found a discount code and decided to go for it. I'm not sure if I used it because it was the most expensive calendar I had ever bought in my life & I didn't want the money to go to waste or because it really worked for me.
I like that each day is divided into Morning, Day, Evening -- 3 blanks boxes to fill as you wish - I like to put my "to-do's" for the day in those boxes. Additionally, on the side of the week lay-out, there is list for "to-do's" -- here I put my list of "would like to get done" -- it helps keep items on my "radar" and if I get to them great. It's a little on the larger size compared to another planners - but they have some really cool design and personalization options to make up for that. :) I didn't order one for 2013 but I put it on my Christmas "wish-list" and was happy to unwrap it from my brother.
Meal Planning: I did meal-planning off and on during last year. I subscribed to 5 Dinners in 1 Hour. It was a great way to get a list of meals that weren't in my regular rotation. She includes a shopping list and directions to make the meals ahead of time. This was a huge time-saver when I was taking night classes. She offers three different types of menus: classic, clean-eating, and gluten free. Not sure if it is for you or not, you can view a free week on her website. Not only does this help with meal-planning, but I found it helped with grocery spending too.
In addition, I came up with a list of around 32 tried and true meals for us. In October, I tried to meal-plan the entire month & do one big grocery shop. The one thing I didn't account for was how many meals would leave us leftovers, so on a good note - we didn't even go through all the meals I had planned. Pinterest was another source of inspiration. I had a new recipes board of eats that sounded yummy & delicious, but I found inspiration for meal planning too and created a meal planning board.
Household cleaning: Once again, PINTEREST helped me find a system that worked for me. I don't use it every week or follow it religiously. It's a very reasonable plan and time efficient too.
Also, I try to email my pals (A&S) a list of to-do's that I would like to get accomplished each evening. Sometimes, this proves to be very productive for me and other times I'm flat out lazy - either way, I have to report back to them the next morning. Accountability! If you are looking to organize your home, I recommend A Bowl Full of Lemons organization challenge.
These are just a couple of things that help keep me on-track. I can honestly say when I try to follow the cleaning plan or meal planning plan, I am less-stressed and more balanced. Do you have any tips for staying organized?

Menu Planning Monday
Sunday: Grilled burgers and oven-baked fries (hubby also grilled wings - it is football season after all). Tip: If you slice the potato and then let them soak in lightly salted water for a couple of minutes. They bake nice and crisp!
Monday: Crustless quiche and fruit
Tuesday: Sour Cream Noodle Bake with Salad and French Bread
Wednesday: White Chicken Lasagna with Salad
Thursday: I'm taking a friend out for her birthday, but there should be leftovers for family.
Friday: Pizza (We've been using the jiffy box mix crust & it's pretty good!)
Saturday: Stir-Fry Chicken and Vegetables with Brown Rice
I'm going to a friend's house on Friday night to work on crafts for Christmas & it's Holiday Open House at work (aka - snack day), so I'll be making some of these marvelous cookie/brownies "brookies" too.

Weekly Menu
Monday -- Homemade Veggie Soup (from my momma!) -- doesn't get any better than that :) I was hoping to add a grilled cheese, but super-son ate all the cheese! I opted for 4 peanut butter crackers instead. Mom's soup is super thick because it is FULL of vegetables (tomatoes, corn; okra; mushrooms; peas; greenbeans) & I love chunky soup because there is no need to add crackers!!
Tuesday -- Meatloaf Muffins; green beans; potatoes
Wednesday -- Spinach Artichoke Bake and a side salad or fruit
Thursday -- Chicken & Vegetable Stir-Fry with Brown Rice
Friday -- We will likely have leftovers to carry forward :) If not, pizza... have I mentioned how much I love Palermo thin crust? You can't beat the calories per serving in that pizza!!!

Weekly Menu
Thanksgiving is over, so I guess we are officially headed into the Christmas season. Although, I think retailers had us headed there in August! Overall, I'm pleased with the food choices I made over the Thanksgiving holiday. I was under my calorie goal every day except Saturday. By my guesstimate, I went over by 30 calories - still not bad. Here is our weekly menu for this week...

Last week's menu did not go quite as planned... crazy huh? I didn't feel like cooking last Sunday (Mother's Day)... so our meals consisted of cereal, sandwiches and McD's on Wednesday night.
